If Zanpakuto releases and Zanpakuto spirits were removed, leaving Shinigami with basic swordsmanship, Kido, Shunpo and some other techniques, I would still like Bleach. However, Bleach would lose what made it so unique in that case. Zanpakuto in general is such a creative fantasy concept with roots in old real life beliefs - beliefs that swords have souls. But even without Zanpakuto spirits, Bleach has so much to offer like Kido that would've probably be expanded upon and special techniques noble families/clans and different swordsmanship schools teach.

I would say no. What makes Bleach so unique IS zanpaktou. That's the core of the power in the series. Without that it would just be a samurai series where the shinigami were nothing more than ghosts. Plus, there'd be no need for Quincy either because a shinigami with just basic swordsmanship isn't going up against a Quincy at full power. The series needed zanpaktou.

I'd be more than fine with the removal of Zanpakuto. A focus on poor swordplay, mixing in some Kido and Flash Step to spruce things up would be a treat... and probably making a lot of the fights in the realm of Ichigo's bouts with Grimmjow where there's little time (or reason) for tons of talking and explaining each other's sometimes complicated abilities. I suppose some really worthwhile Shikai or Bankai could be repurposed as Kido if absolutely necessary. Though it's not like Shikai and Bankais limit the possibilities for fantastic sword fighting, what with some of the battles in the Zanpakuto Rebellion and Reigai arcs being able to attest to.

I think the zanpakuto and the crazy abilities are a big part of what makes Bleach fun. So, while I'm not the person sitting there obsessively waiting to see bankai releases, I do think that they are an integral part of the series. I definitely wouldn't like it as much without them.
